Packed lunch ideas: Friday's Salad Today's simple packed lunch idea: Cold noodle salad This is a MUST TRY salad! It is really good and simple to put together. All you need is a bunch of soba noodles, a bowl of icy-cold water on standby, 1 carrot, I cucumber, a sprig of spring onion, a sprig of Chinese parsley, 1 tablespoon of crushed cashews, a handful of bean sprouts and for the sauce, you will need a table spoon of soy sauce, a tablespoon of honey and a teaspoon of sesame oil. This Japanese inspired salad is something that you will enjoy. This salad is a great way to enjoy Soba noodles. Soba noodles are made of buckwheat, really nutritious and the mouth-feel of the noodles is just something different from the noodles that we commonly eat. Remember that eating healthily is really is not that difficult, just choose fresh ingredients and make sure that your plate or lunchbox is FILLED WITH COLOURS (natural colours of course!)
