The consistency was more gelatin-like than pudding like. We ordered the dark chocolate and marshmallow chocolate chip. Neither were awful but neither had amazing chocolate flavor - what I was most hoping for. I prefer the shake/pudding mixes. If you let them sit in the fridge a bit after mixing, the texture is even more pudding like!  dark chocolate done rightby PJ from NC on 3/19/2012 This dark chocolate pudding demonstrates that you can do dark chocolate in a satisfying way in a high-protein diet mix. For some reason I have trouble getting all the lumps out of this when I mix it (I've tried shaker cup, immersion blender, and hand mixing), but if you can get that sorted it makes for a pretty tasty little bowl of pudding. Reduce your liquid slightly for a thicker set. I sometimes mix 1:1 with almond milk for a little more richness. Satisfying. The hardest thing about a low carb lifestyle is finding something for the sweet tooth & this is it! Dark chocolate is exactly that, dark, rich & satisfying. Caramel is more of a butterscotch & wonderful. Banana & Lemon are good but the Toffee was a little too bland. Chocolate with marshmallows is nice for a change of texture but isn't as chocolatey as the dark chocolate. (Updated on 3/6/2012.) The fact that it has chocolate chips and marshmallows in it makes it feel more indulgent than the other pudding flavors, in my opinion. I like it very cold, so I make it with cold water, and then put it back in the fridge or freezer for a few minutes. If I've saved my milk serving, I like it even better with ice cold milk. Eat it quickly however, cause the longer it sits out the less chocolatey it tastes. I make banana pudding for her using this and one package of the regular instant banana pudding from the store. Add a layer of Nilla wafers and cover with more pudding. Top it off with some cool whip and she loves it! I also know if that is all she will eat that she has gotten protein in her and is ok. You need to follow the instructions and the colder the water the better.. One caution, it stains carpet and is difficult to remove. Otherwise, I can find nothing wrong with it.. How nice! I must say I tried the Dark Chocolate Pudding tonight and I couldn't believe it was diet pudding. I put a little fat free whipped cream on it and it was oh so creamy! You have to think twice to realize that your eating dietetic pudding! I highly recommend this and know I will be adding this to my definite order list! It is good, but I keep remembering what my grandma used to make. Toffee cream and caramel: Okay, but I don't care for these flavors anywhere, just not my cup of tea. But if you like it, they would satisfy as they are creamy and full of flavor. Butterscotch and banana: A 5. What took so long to come out with these? Oh Yum. Lemon Puddingby protein lifesaver from Oklahoma on 4/20/2011 I do not like chocolate, nor any high protein items so this is a must have in my daily diet. I love citrus so this is a perfect food to me. I wish it weren't soooo expensive!! Although I bought $150 dollars worth my latest order. Please don't stop carrying it.
